This coffee blew us away on the cupping table. The dry aroma is full of blueberries but as we tasted it, the perceived sweetness reminded us of birthday cake and a fruity lychee finish.
ABOUT BANKO GOTITI
Banko Gotiti is a well-known coffee-producing town in the Gedeo Zone, which is located in the Southern Nations, Nationalities, and Peoples' Region of Ethiopia. The washing station processes coffee cherries from about 350 family-owned farms that grow coffee in single-hectare gardens at elevations of around 1900 to 2300 meters above sea level. Banko Gotiti's nutrient-dense soil, altitude, and climate create a sweet, expressive, and complex cup.
ANAEROBIC NATURAL PROCESSED COFFEE
After the coffee is harvested from shade-grown coffee trees, it is transported to the mills to undergo selection and remove any cherries that do not meet quality control standards. The coffee cherries are then transferred to pressurized tanks with low oxygen to ferment for 7 to 10 days at 15 to 18 degrees Celsius. They are then removed, pulped, and dried.
