Although he is so young, he is producing some of the most impressive coffee we have had coming out of Colombia. Along with his brothers, they became obsessed with planting differentiated varieties and refining fermentation.\u003c\/p\u003e\n\u003ch3 data-path-to-node=\"13\"\u003eThe Process\u003c\/h3\u003e\n\u003cp data-path-to-node=\"14\"\u003eProduced in small lots, this coffee undergoes a meticulous natural process. The cherries are hand-harvested at peak ripeness and fermented for just three days in tanks (technically anaerobic). Finally, the coffee is removed from fermentation and dried for 3-4 week on sun beds till it reaches 11% moisture.\u003c\/p\u003e\n\u003ch3 data-path-to-node=\"15\"\u003eThe Coffee\u003c\/h3\u003e\n\u003cp data-path-to-node=\"16\"\u003eThis natural Gesha is a creamy, dessert-like coffee with a texture reminiscent of chocolate ganache.
