ABOUT THE COFFEE
This is undoubtedly the most memorable coffee we've featured on our menu so far. Diego Bermudez continues to impress with his exceptional coffees, and this one is no exception. The Chiroso varietal has recently become highly sought after, with some even comparing it to the Geisha due to its distinctive profile. The dry aroma of this coffee is strikingly spice-forward, while its flavor reveals an intense sweetness reminiscent of ginger candy. Despite its sweetness, the coffee is remarkably clean, with a delicate body and a pleasantly mild acidity.
THE PROCESS
Unlike most of Diego Bermudez's coffees, this Chiroso is traditionally washed. This process involves picking, pulping, fermenting, washing, and drying the coffee.
