Description
We were fortunate enough to score some of this prized coffee from our friends over at Cafe Kreyol. This honey processed geisha placed 2nd in the prestigious 2025 'Cup of Excellence' competition.
The farmer, Helina Marini, achieved this with organic compost to enrich the soil. The coffee is picked at peak ripeness, naturally fermented, and then pulped without water. Finally it is gently dried on raised beds to preserve flavors from fermentation. This coffee is an amazing expression of terroir in Mexico.
In the cup, we find delicate rose florals, rounded acidity like overripe raspberries with a lingering sweetness similar to grape juice. We are blown away at the complexity of the cup while still having balance in flavors which lead to its COE score of 90.75 in the honey process category.
