Description

This is our second release from Andres Martinez, and it truly does not disappoint. Andres Martinez is a producer from Cauca, Colombia. Formerly, the Head of Fermentation at El Paraíso, he has now branched out to cultivate and produce coffee on his own small farm, El Sendero.

From our importing partner, Unblended "Andrés begins by fermenting the cherries for 18 hours, promoting balanced oxidation that enhances flavor stability. Then, they undergo mucilage fermentation for 12 hours, with stirring every 3-4 hours to ensure uniform collection. Afterward, the coffee goes through an initial drying phase for two days before undergoing a second fermentation with the leachate in sealed tanks for 48 hours".

This coffee hits every single marker of a classic geisha; floral, sweet, and complex acidity. In the cup, the coffee is intensely fragrant, with florals and bergamot. As it cools, it becomes balanced and elegant, tasting initial notes of jasmine with a sweet and complex acidity similar to oranges.
