Finca El Jardin is a three-hectare farm located in Tolima, managed by the innovative Jorge Rojas. Since transitioning to specialty coffee in 2016, Jorge has become a student of the craft, constantly experimenting with new varieties and processing techniques to push the boundaries of quality.

Jorge’s signature method begins with a strict hand-selection of cherries to ensure only the highest quality fruit enters the wet mill. The coffee first undergoes a 72 hour anaerobic fermentation in sealed tanks. After being depulped, the beans are returned to the same tanks for an additional 38-hour fermentation.

The drying stage is just as rigorous, utilizing a precisely timed "staged" approach:

  • Initial Dry: 28 hours in a mechanical dryer at a constant 30°C.

  • Rest: 24 hours in bags in a cool, dark environment.

  • Greenhouse Dry: 48 hours at 30–34°C.

  • Final: A second 48-hour mechanical drying stage at 38°C to reach perfect stabilization.

In the cup, we find this coffee to be so complex. From the dry aromas you get various berries and fruit reminding us of grapes and strawberries. Right off the bat, you will notice a rounder body and a sweet acidity, similar to grape gummies or strawberry milk. As it cools, the coffee begins to coat your tongue similar to dairy while toting a sweet finish that makes you want to take another sip.
