Sweet Pink - Black Honey Ethiopia

The Producer

This coffee comes out of the Lalesa Site in Gedeb, located in southern Yirgacheffe, Ethiopia. It is exported by Ephtah Specialty Coffee, an Ethiopian green coffee exporter founded by General Manager Wubit Bekele, who got her start working under one of the largest coffee exporters in Ethiopia. Ephtah focuses on building sustainable, collaborative supply chains that connect local smallholder farmers to international clients, with a special emphasis on empowering women as drivers of social and economic change in coffee-growing communities.

The Process

Cherries are first bought from local smallholder farmers and floated to remove any unripe or under-dense fruit. The selected cherries are then set out on drying beds for one full day to increase mucilage on the bean after pulping. Following this initial drying period, the coffee is pulped and returned to the drying beds for an additional 20 days to reach optimal moisture content.

The Coffee

Super tasty and unmistakably jammy, this is easily one of our favorite cups of the year. It bursts with intoxicating aromatics of mixed berries and boozy wine, opening hot as a bright, juicy cup of pink lemonade and berry jam. Cooling down, its texture thickens into a rich, mouth-coating body with a long finish that sips just like sweet blackberry wine.
