Description
The Producer
The Nafuna Site is located in eastern Uganda - bordering Kenya in the Village of Bukyabo on Mt. Elgon. This nanolot is named after Jackie Nafuna, the Field and Processing Officer of Falcon Coffee, in appreciation of her dedicated work. Jackie supervises up to 60 workers at the station, ensuring the meticulous sorting, drying, and tracking of each batch of coffee. In the off-season, Jackie is tasked with training farmers and collecting data.
The Process
Freshly picked, ripe cherries are first pulped, then submerged in water and fermented with their own pulp for 23 hours. This pulp comes from freshly pulped cherries, not dried cascara. After fermentation, the coffee is then washed and dried on drying beds in our solar dryers and meticulously sorted at 12 different stages before export.
The Coffee
This coffee is a wonderful expression of the Ugandan terroir. Delicately nuanced from start to finish, the cup presents as exceptionally clean and tea-like when hot, revealing prominent notes of chamomile and sweet cascara tea. As the cup cools, a vibrant, sparkling acidity begins to emerge—bringing forward bright citrus characteristics while beautifully maintaining a delicate body.
