Description
We are no strangers to serving coffees from Habtamu Fekadu Aga. While they manage several exceptional washing stations, their Goro site truly wowed us. Their rigorous processing standards, dedication to the environment, and care for the local community are just a few of the reasons their coffees stand out so brilliantly.
From our partners: "This washing station uses a combination of machinery to sort, pulp, and remove mucilage. The result is a bean with about ten percent mucilage left on it, which is then fermented for 24 hours before being hand-washed and laid out to dry on sun beds for 9–12 days. The beans are kept out of direct sunlight, and every few hours the coffee is turned and inspected to ensure consistent drying."
This lot is a beautiful example of why we love Ethiopian coffee. It is incredibly crisp yet wonderfully sweet. When hot, fresh strawberries and citrus peel jump from the cup. As it cools, a deep sweetness emerges, beautifully reminiscent of ripe apricots.
