The Producer
Carmen Montoya is a what some might called "Mother of Chiroso" after winning the prestigious 2014 Cup of Excellence. Based at her farm, Bella Vista, in Urrao, Colombia, Carmen mentors surrounding farmers and oversees meticulous processing standards to elevate her region’s coffee reputation worldwide.
The Process
Harvested strictly at peak ripeness, the cherries undergo an initial 12-hour open-basket fermentation in their own pulp before being depulped. The beans are then transferred to stainless steel tanks for an extended 72-hour second fermentation before being thoroughly washed and dried on open patios for eight days.
The Coffee
This washed Chiroso has a silky body accompanied by vibrant acidity. Bright, notes of mandarin orange and delicate florals are balanced by a deep honey sweetness, resulting in an exceptionally complex cup.
